LOS ANGELES — The compound thaumatin, from the katemfe bush of West Africa, is considered the sweetest substance known to man.

It is 100,000 times sweeter than sugar and 600 times sweeter than aspartame, the major ingredient of the artificial sweetener used in some diet soft drinks.
