HORSE FEATHERS: As it gets more expensive to keep a horse, more are being slaughtered (E1). But horse owners needn’t worry that they’ll see their steeds on a platter close to home, says Rex Chandler, owner of two Newport Beach restaurants. . . . Americans “honor our horses,” in part because of “our Western heritage” and one-time dependence on the steeds “for our survival,” Chandler says.
