Hainan Moves West

Chinese from Hainan Island are responsible for one of Southeast Asia’s most popular chicken dishes, Hainan chicken rice. It’s a staple in Singapore and has traveled as far west as Rosemead, where it’s available at a food stall called Golden Bull Noodle. The components are sliced poached chicken breast, rice cooked in the broth, a bowl of the broth, red chile and ginger dipping sauces and sliced cucumber and tomato. Golden Bull will pack these to go--and perhaps pour you a cup of tea while you wait.
